Master blacksmith Shuji Toyama, 83, from Sanjo, Japan, trained Shinichi Watanabe in traditional Japanese knife-making. Both craftsmen now operate independent workshops, with their combined knife collections representing decades of shared expertise and traditional forging methods.

Toyama and Watanabe knives feature convex grinds and substantial construction for controlled cutting performance. The craftsmen specialize in heat treatment of aogami #2 steel, producing Japanese kitchen knives with superior edge retention and long-term durability.
