Japanese kitchen knives are crafted by blacksmiths and established workshops from Sakai, Sanjo, Seki, and other regions across Japan. These knives are forged from carbon steels like Hitachi aogami (blue steel) and shirogami (white steel), as well as stainless steels like VG10, SG2, and ginsan.
