Yoshikazu Tanaka has been forging Japanese kitchen knives in Sakai for over 50 years. Working primarily with Hitachi aogami and shirogami carbon steels, he crafts gyutos, nakiris, petty knives, and traditional styles like yanagiba. His blades are known for meticulous heat treatment, finished by Sakai's most skilled sharpeners. Tanaka's knives are sold under multiple brand names including Ittosai Kotetsu and Goh Umanosuke Yoshihiro. Certified as a Sakai Master Craftsman in 1996, he continues to forge each blade by hand using traditional methods.
