An AS (Aogami Super) Kurouchi Gyuto forged by one of Sakai’s finest, Yoshikazu Tanaka. In line with our preference for a minimalistic aesthetic, we requested this batch to not have any brand stamps, mirroring the stylistic choice in another Y. Tanaka Gyuto—the mirror-finished AS. These knives are thin behind the edge while still retaining a robust feel and are sharpened with a concave grind.
