An AS (Aogami Super) kurouchi gyuto forged by one of Sakai's finest, Yoshikazu Tanaka. In line with our preference for a minimalistic aesthetic, we requested this batch to not have any brand stamps, mirroring the stylistic choice in another Y. Tanaka gyuto—the mirror-finished AS. These knives are thin behind the edge while still retaining a robust feel and are sharpened with a concave grind.
(We've updated this page. The actual sharpener of the Kurouchi series is young craftsman Takuma Izumo, who's also from Yamawaki hamono, not Masaya Shimizu. Our apologies for the error.)
