Zahocho Knives Tokyo
We're Fred and Akiko. I trained as a sushi chef in Japan, and knives were always the part of the job I cared about most. The plan was to eventually open our own small restaurant. Then COVID happened, and Zahocho was born instead.
We started it together in 2019. We work with craftsmen across Sakai, Sanjo, Echizen, and other regions.
Every knife we carry is something I'd personally use, from entry-level to collector pieces. The craftsmen behind them have been doing this for decades.
The name
Zahocho is a wordplay. In Japanese, "the" can be pronounced "za," and "hocho" means knife. So, the knife. We want to help you find the knife for you. Nothing deep and philosophical.
