We're Fred and Akiko, a husband-and-wife team with a deep love for cooking and Japanese knives. Our journey began with a shared passion for food – Fred as a sushi chef and Akiko with her lifelong interest in cooking. When our plans to open a Japanese restaurant were altered by the pandemic, we embraced a new dream: bringing authentic Japanese kitchen knives to enthusiasts of all levels.
Founded in 2019, Zahocho Knives Tokyo caters to everyone from beginners and home cooks to professional chefs and collectors. We take pride in offering some of the finest knives from Japan to support your culinary journey.

The meaning behind 'Zahocho'
Our name Zahocho plays on "za" (the) and "hocho" (knife) in Japanese. The wordplay reflects our goal: helping you find the knife that works best for your cooking style and needs.
In Japanese culture, "za" suggests groundedness and stability, connecting with the traditional craftsmanship of Japanese knives. It also represents trustworthiness, matching our aim to be a reliable source for quality kitchen knives.
