The Yoshikazu Tanaka AS gyuto 240mm is a handcrafted Japanese chef's knife forged in Sakai by Yoshikazu Tanaka and sharpened by Masaya Shimizu at Yamawaki Hamono. This knife features an Aogami Super carbon steel core with iron cladding and kasumi finish. The kasumi finish creates a subtle contrast between the polished core steel and the hazier cladding. The blade measures 229mm with 51.1mm height and weighs 172g. The iron cladding will develop a natural patina over time with use.
About the brand: Goh Umanosuke Yoshihiro is a premium line by Yamawaki Hamono, a Sakai-based wholesaler established in 1927. They operate their own sharpening workshop, finishing knives from renowned blacksmiths including Genkai Masakuni, Yoshikazu Ikeda, Satoshi Nakagawa, Kenji Togashi, and Shogo Yamatsuka.
