The Yoshikazu Tanaka AS Tall Gyuto 210mm is a handcrafted Japanese chef’s knife forged by Sakai blacksmith Yoshikazu Tanaka. Made as a custom order placed in March 2022, this knife features a taller heel and slightly thicker spine than standard Sakai gyutos.
The blade’s convex grind and behind-the-edge thinness contribute to its cutting performance. The sharpening work reflects the precision expected from Sakai’s experienced craftsmen.
Like other Sakai custom orders, it has a minimalist bokashi finish and a classic octagonal magnolia handle.
