The Yoshikazu Tanaka AS Tall Gyuto 240mm is a handcrafted Japanese chef's knife forged by Sakai blacksmith Yoshikazu Tanaka. Made as a custom order placed in March 2022, this knife features a taller heel and slightly thicker spine than standard Sakai gyutos.
The blade’s convex grind and behind-the-edge thinness contribute to its cutting performance. The sharpening work reflects the precision expected from Sakai’s experienced craftsmen.
Like other Sakai custom orders, it has a minimalist bokashi finish and a classic octagonal magnolia handle.
Notes
This Tanaka AS batch was acquired through a different channel, not via Yamawaki Hamono like other Tanaka knives.
The 210mm version has kanji only on the left side, while the 240mm ended up with kanji on both sides due to a stamping error. This layout was a previous option, so it was retained.
