The Yoshikazu Tanaka AS tall gyuto 240mm is a handcrafted Japanese chef's knife forged by renowned Sakai blacksmith Yoshikazu Tanaka. Specifically made as our custom order (placed in March 2022), this knife features a taller heel and slightly thicker spine than typical Sakai gyutos. 

The blade's robust feel is complemented by the excellent convex grind and the usual behind-the-edge thinness, resulting in exceptional cutting performance. The sharpening work exemplifies the outstanding craftsmanship one expects from one of Sakai's master sharpeners. 

Just like our other Sakai custom orders, this comes with a minimalist bokashi finish paired with a classic octagonal magnolia handle. 

Notes:
• This batch of custom Tanaka AS is from a different source, not Yamawaki hamono, unlike our other Tanaka knives.
• While the 210mm version has kanji only on the left side, the 240mm ended up with kanji on both sides due to a stamping error. We kept it this way as it was a previous layout option anyway and still looks great.
