The Yoshikazu Tanaka AS Tall Gyuto 240mm is a handcrafted Japanese chef's knife forged by Sakai blacksmith Yoshikazu Tanaka. Made as a custom order placed in March 2022, this knife features a taller heel and slightly thicker spine than standard Sakai gyutos.

The blade’s convex grind and behind-the-edge thinness contribute to its cutting performance. The sharpening work reflects the precision expected from Sakai’s experienced craftsmen.

Like other Sakai custom orders, it has a minimalist bokashi finish and a classic octagonal magnolia handle.

Notes

  • This Tanaka AS batch was acquired through a different channel, not via Yamawaki Hamono like other Tanaka knives.
  • The 210mm version has kanji only on the left side, while the 240mm ended up with kanji on both sides due to a stamping error. This layout was a previous option, so it was retained.
