A mirror-finished AS (Aogami Super) gyuto forged by one of Sakai's finest, Yoshikazu Tanaka. This knife has been sharpened and finished by Masaya Shimizu of Yamawaki Hamono. In line with our preference for a minimalistic aesthetic, we requested this batch to not have any brand stamps, mirroring the stylistic choice in another Y. Tanaka gyuto—the kurouchi AS. Compared to the previous batch of Y.Tanaka AS, these knives are thinner behind the edge while still maintaining a sturdy and robust feel.
