Featuring a Shirogami #2 (White #2) steel core, this knife is known for its sharpness and ease of sharpening. Traditionally designed for slicing octopus ("tako" in Japanese), it is also suitable for general sushi and sashimi preparation. The 300mm length makes it well-suited for professional sushi chefs.
