The Yoshikazu Tanaka AS tall gyuto 210mm is a handcrafted Japanese chef's knife forged by renowned Sakai blacksmith Yoshikazu Tanaka. Specifically made as a custom order (placed in March 2022), this knife features a taller heel height and slightly thicker spine than typical Sakai gyutos.

Note: This custom Tanaka AS batch was acquired through a different channel, not via Yamawaki Hamono like our other Tanaka knives.
