The Yoshikazu Tanaka shirogami #2 gyuto 240mm is a handcrafted Japanese chef's knife forged in Sakai by Yoshikazu Tanaka and sharpened by Masaya Shimizu at Yamawaki Hamono. This knife features a Shirogami #2 carbon steel core with iron cladding and kasumi finish. The kasumi finish creates a subtle contrast between the polished core steel and the hazier cladding. The blade measures 232mm with 51.9mm height and weighs 164g. The iron cladding will develop a natural patina over time with use.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.

When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away.
