Chuka bocho are Japanese-made Chinese cleavers with large rectangular blades designed for versatility. Unlike Western cleavers made for bone work, these excel at both fine vegetable prep and heavier chopping tasks. The broad blade and substantial heel height make them excellent for scooping and transferring ingredients.
