Hand-forged in Echizen, Japan by Nao Yamamoto for the Akifusa brand, this 240mm gyuto has an Aogami Super core, which holds an edge longer than most carbon steels. A tsuchime kurouchi finish sits over iron damascus cladding. This Japanese chef's knife has an authoritative, solid feel in hand, built for cooks who prefer a hefty blade over a lighter one. At 240mm, it is a versatile length, especially useful in professional kitchens.

Nao Yamamoto (born 1979) is a certified master blacksmith from Takefu (Echizen), Japan. He trained extensively at two renowned knife-making workshops: Asai Hamono (1998) and Kamotou Hamono under Shiro Kamo (1999). In 2013, he established Yamamoto Uchi Hamono, his own knife-making workshop. His mastery of traditional Japanese knife-forging earned him the Dento Kougeishi (Traditional Craftsmen) certification in 2019.

Kurouchi finish varies from knife to knife. Fading, patchy spots, and light scratching are normal characteristics, not defects. If you prefer a clean & uniform finish, other finish types may suit you better.
The blade has a protective lacquer coating. Remove it with acetone before first use.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away. It could be months before that item comes back, if at all. We bring in new knives regularly, but they're not always the same ones. Our newsletter is the best way to stay updated on new arrivals.
