Hatsukokoro is a Japanese knife brand operated by H&K that collaborates with independent blacksmiths across Japan. Each Hatsukokoro series is forged by a different craftsman, including Satoshi Nakagawa, Yoshihide Masuda, Toru Tamura, Takahiro Nihei, Go Yoshizawa, Haruki Miyazaki, Yoshikane, and Yoshihiro Yauji, to name a few. The collection ranges from accessible stainless steel and carbon gyutos to limited-edition honyaki pieces, with each knife maintaining the blacksmith's traditional forging methods and finishing techniques.
