Hand-forged by Taiki Maeda, 6th generation blacksmith of Motokyuuichi Hamono, in Nagasaki, Japan for the Hatsukokoro brand, this 240mm gyuto has an Aogami Super core with iron cladding. Its kurouchi finish gives it a traditional, rustic look. The knife carries noticeable heft, solid and substantial in the hand. Aogami Super offers exceptional edge retention, among the best of any carbon steel. This is a well-built Japanese chef's knife for cooks who want some weight behind their cuts.

Kurouchi finish forms naturally during forging. Fading, patchy spots, or light scratching are normal and not defects. If a uniform finish matters to you, other finishes may suit you better.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away. It could be months before that item comes back, if at all. We bring in new knives regularly, but they're not always the same ones. Our newsletter is the best way to stay updated on new arrivals.
