Hand-forged in Echizen, Japan by Yoshimi Kato, this 210mm kiritsuke gyuto has a VG10 core with a damascus cladding. The blade is etched, making the layers stand out clearly. Its reverse tanto tip is useful for fine tip work. VG10 offers good edge retention, corrosion resistance, and sharpens easily on stones. The knife feels light in the hand for its size. This is a solid pick for cooks who want a stainless kiritsuke gyuto with some visual flair alongside its performance.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away.
