Hand-forged in Echizen, Japan by Yoshimi Kato, this santoku has an SPG STRIX core with a polished tsuchime finish. This is a compact Japanese multipurpose knife. The compact size adds maneuverability, useful in any kitchen. It is fully stainless, so rust and patina are not something to think about. SPG STRIX is a new steel from Takefu Special Steel, built with a different approach than older powder steels. It sharpens more easily than other powder steels while still holding an edge just as well. It runs about 65 HRC.

Yoshimi Kato is the third-generation blacksmith at Kato Knife Manufacturing in Takefu, Echizen, a region with 700 years of knife-forging history. He learned the craft directly from his father and grandfather before them, both respected figures in the Echizen blacksmithing community. Yoshimi has been forging knives under his own name since 2012, and took over full leadership of the family workshop in 2018.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away. It could be months before that item comes back, if at all. We bring in new knives regularly, but they're not always the same ones. Our newsletter is the best way to stay updated on new arrivals.
