Specifications

Hand-forged in Echizen, Japan by Yoshimi Kato, this 210mm gyuto has an Aogami Super core with stainless steel cladding and a nashiji finish. This Japanese chef's knife holds an edge longer than most carbon steels. Stainless cladding makes maintenance easier. Only the exposed core steel will develop patina over time. The spine is nicely rounded and polished. It is lightweight and nimble, suited to everyday cutting tasks.

Yoshimi Kato is the third-generation blacksmith at Kato Knife Manufacturing in Takefu, Echizen, a region with 700 years of knife-forging history. He learned the craft directly from his father and grandfather before them, both respected figures in the Echizen blacksmithing community. Yoshimi has been forging knives under his own name since 2012, and took over full leadership of the family workshop in 2018.

FAQ

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.

When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away. It could be months before that item comes back, if at all. We bring in new knives regularly, but they're not always the same ones. Our newsletter is the best way to stay updated on new arrivals.
