Hand-forged in Kochi, Japan by Toru Tamura, this 240mm sujihiki has an Aogami #2 core with iron cladding. The iron cladding shows subtle banding. At 240mm, this is a compact slicer, suited to those who prefer a nimble, maneuverable Japanese slicing knife over the longer 270mm or 300mm.
Although this is technically a sujihiki, it can function as a multipurpose knife. It can take on certain gyuto-type tasks, so some would reasonably call it a "slim gyuto" instead. It is not uncommon for some pros to use a 240mm sujihiki as their main all-purpose blade instead of a gyuto. It cuts with less drag and feels light and nimble in hand.

The degree of banding on the iron cladding varies from knife to knife. Some show more visible banding, others a fainter pattern.
Minor variations in finish, surface marks, and measurements are normal in handcrafted Japanese knives.
Handle is fitted by the maker and shipped as-is. We don't offer handle swaps.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away. It could be months before that item comes back, if at all. We bring in new knives regularly, but they're not always the same ones. Our newsletter is the best way to stay updated on new arrivals.
