Specifications

This is a one-piece hinoki cutting board made by Kinari, based in Kanagawa, Japan. Each board is cut from a single piece of hinoki from a tree more than 100 years old, using only masame, the straight-grained section of the wood. The corners are softly rounded and the surface is smooth all over.

Hinoki is medium-soft, so it is gentle on knife edges. That makes it a good match for Japanese knives, and it is why sushi chefs have used hinoki for so long.

This is the Standard version (360 x 220 x 25 mm). Also available in Mini (250 x 150 x 20 mm) and Small (310 x 190 x 25 mm).

Care instructions

  • Before use: wet both sides and wipe off the excess. This helps stop stains and odors from soaking in, and it is gentler on the blade.
  • Wash along the grain with dish soap and rinse well.
  • Wipe dry, then dry upright in a ventilated spot, out of direct sun.
  • No bleach or dishwasher.
