Specifications
Handforged in Sakai, Japan by blacksmith Kenji Togashi, with sharpening by Nori Igarashi of Yamawaki Hamono. This 210mm gyuto is forged from Aogami #1 (Blue #1), water-quenched. The full mirror finish already shows the hada/banding. As patina develops with use, the banding becomes more pronounced (etching will bring it out immediately if you don't want to wait). At 210mm, it's a natural fit for smaller kitchens or anyone who prefers a more compact blade for everyday use.
Togashi-san's aogami #1 is easier to sharpen than most people expect from a honyaki at this hardness. It responds well on the stone and gets back to a keen edge without much effort.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away.
