The Shigefusa kurouchi nakiri is a straightforward vegetable knife designed for clean push cuts and efficient chopping. It uses a Swedish carbon steel core with iron cladding in a warikomi construction. The blade has a kurouchi finish that helps reduce reactivity and gives the surface a natural forged appearance. The spine is thick near the handle and tapers toward the tip, which provides stability and solid feel during cutting. The geometry is consistent along the length of the blade, and the 50:50 edge makes it suitable for a wide range of daily prep tasks. The knife is fitted with a D-shaped magnolia handle and a buffalo horn ferrule.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away. It could be months before that item comes back, if at all. We bring in new knives regularly, but they're not always the same ones. Our newsletter is the best way to stay updated on new arrivals.
