Specifications

The Asahi Professional Series is the same line of cutting boards used by chef Jiro Ono of Sukiyabashi Jiro in Tokyo. It is a general‑purpose board made of synthetic rubber with a subtle wood‑like texture that provides a stable, comfortable cutting surface.

Compared to many other cutting boards, Asahi boards offer high scratch resistance, low water absorbency, and quick drying. They are also gentle on knife edges, allowing you to prolong sharpness thanks to their ability to absorb impact during cutting. This makes them an excellent match for Japanese knives, where edge retention and surface feel matter.

Maintenance is straightforward. The board is easy to wash, stain‑resistant, and unlike wooden boards, it does not require periodic oiling. It’s a practical choice for both home cooks and professionals who want durability without added upkeep.

A cut‑test video is available for reference. Displayed knives are only for size comparison (210mm and 240mm gyutos).

FAQ

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.

When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away. It could be months before that item comes back, if at all. We bring in new knives regularly, but they're not always the same ones. Our newsletter is the best way to stay updated on new arrivals.
