This is the professional series from Asahi. The same cutting board used by chef Jiro Ono of Sukiyabashi Jiro in Tokyo.

It's a general-purpose cutting board made of synthetic rubber with a nice wood-like texture. I

Compared to other cutting boards, Asahi boards have high scratch resistance, low water absorbency, and are quick drying. Such boards are also easy on knives so you are able to prolong the edge of your knife due to its high knife impact force absorbance.

Maintenance is really a breeze with this one. It's easy to wash, stain-resistant, and unlike wooden boards, there is no need for that occasional oiling for maintenance.

Here's a cut test video using this board.

Care Instructions

Japanese kitchen knives requires some attention. It's crucial to pay attention to the following points.

Correct use
• Always use the appropriate knife for the task.
• Refrain from moving the knife in a lateral direction while cutting. Use the thrust-cutting technique.
• Avoid bones and frozen food.
• Always use a wooden or rubbing cutting board. Avoid hard plastic, glass, or marble.

• Wash and dry the blade as soon as you're done with it especially carbon steel knives.
• Always wash your Japanese kitchen knife by hand. Never use a dishwasher.

Knife maintenance
Use sharpening whetstones to sharpen or touch up your Japanese knife. In general, honing rods are not recommended as using these will cause damage to the edge. Honing rods are for western knives. Electric sharpeners and pull through sharpeners should never be used on Japanese kitchen knives.
