Collection: Petty knives

The petty is the Japanese utility knife. Usually 120 to 150mm, small enough for work a gyuto is too large for: peeling, trimming, and detail work on fruit, vegetables, and herbs.

Most people end up using it more than they expect. It is the natural second knife after a gyuto, and the one that stays on the board for small jobs.
