This is a collaboration between Zahocho Knives Tokyo and Kisuke Manaka Hamono. We've been wanting a great all-around knife that is not too long but still a very versatile performer. The aogami#2 core with stainless clad will allow you to enjoy the best of both worlds: the sharpness and edge retention of carbon steel (aogami#2) and the easy maintenance brought about by the stainless clad.
The 180x50mm is a perfect dimension for such a knife. With its good heftiness and excellent geometry, the knife just glides through food without exerting much effort even on dense ingredients such as carrots. Regardless of the grip style, it is also comfortable to hold. The spine that is "thick enough" gives that stable feel while using it.
And of course, this bunka rocks aesthetically! Great performer, for sure, and a subtle rockstar in your kitchen.
We are lucky that Kisuke-san allowed us to create this bunka based on our preferences. It's perfect both for home cooks as well as pro chefs.
