A Sakai Hokushin-branded Honyaki Santoku knife, crafted by master blacksmith Yoshikazu Ikeda and sharpened by Hideki Ino in Sakai, Japan. The blade is forged from Shirogami #3 (White #3) steel, known for its superior sharpness and toughness. It is a well-balanced steel, especially for Honyaki. Among the Shirogami steels, Shirogami #3 has the best toughness.
Note: This knife is smaller than your typical Santoku. It can actually be considered a tall petty.
