This is a Mizuhonyaki Shirogami #2 Santoku forged by master blacksmith Kenji Togashi. It features a full mirror polish with an Ayanami (wave) hamon and is sharpened by Nori Igarashi of Yamawaki Hamono.
Kenji Togashi started making knives in 1967 and is regarded as one of Sakai’s master blacksmiths. In 1996, he was officially recognized as a "Dentoukougeishi" (Traditional Craftsman) by Japan’s Ministry of Economy, Trade, and Industry. In 2007, the city of Sakai awarded him the "Master of Traditional Crafts" certification for his excellent quenching technique and outstanding skills in making kitchen knives.
Other master craftsmen with this certification include Yoshikazu Tanaka, Yoshikazu Ikeda, Shigehiro Kasahara (sharpener), and Hirotsugo Tosa (sharpener), among others.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away. It could be months before that item comes back, if at all. We bring in new knives regularly, but they're not always the same ones. Our newsletter is the best way to stay updated on new arrivals.
