The Isamitsu kurouchi shirogami#1 gyuto 210mm is a high-quality Japanese knife that showcases the exceptional craftsmanship of Yhuki Abe and Gaku Kanatsu. This dynamic duo, both originating from Teruyasu Fujiwara hamono, has combined their skills to establish Isamitsu, a relatively new company that is quickly gaining recognition for their outstanding blades.

This particular series features a thinner cross-sectional geometry compared to regular Isamitsu offerings, while still employing the same steel and forging methods as their original knives. As per Gaku-san, "There is no difference in quality. But yours are relatively thinner than regular. We made them with the highest priority on maximizing the finest sharpness."

With a generous blade height of approximately 54mm, this gyuto is an excellent choice for tall gyuto fans who appreciate the additional knuckle clearance. The 215mm blade length is perfect for a wide range of cutting tasks, making it a versatile addition to any kitchen.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
