A 240mm kiritsuke gyuto with a Ginsan/ Silver#3 core steel. It has a nice nashiji finish and is paired with an octagonal rosewood handle. Ginsan or Silver#3 is an original steel by Hitachi Metals. Hitachi describes it as having the same hardness and sharpness comparable to carbon steel. Long-time enthusiasts also consider it as the Shirogami of stainless steels: it's easy to sharpen and has a better ability to take and hold low edge angles compared to other stainless. This steel also has very good toughness.
*A gyuto is a type of Japanese kitchen knife that is used for a variety of cutting tasks. This multipurpose knife is used for slicing, dicing, and chopping meats, vegetables, and fruits. The versatility of the Gyuto makes it a popular choice for both professional and home chefs.
