The Shigeki Tanaka R2 damascus santoku is a handcrafted Japanese knife forged by Miki-based blacksmith Shigeki Tanaka. It is part of his top-of-the-line series, which is favored by collectors for its iconic ironwood handle. The knife features an SG2 steel core for superior edge retention. The blade showcases a striking damascus finish, which perfectly pairs well with that classic desert ironwood handle.
The santoku is a versatile all-purpose kitchen knife. It is ideal for cutting meat, fish, and vegetables. It's a go-to knife for many home cooks and professional chefs alike to complement their gyuto or chef's knife.
⎯
Shigeki Tanaka, a renowned Japanese blacksmith from Miki City, Hyogo Prefecture, started his career in 1996 at Shimizu Cutlery in Takefu City, Fukui Prefecture, where he trained in traditional knife-making. After three years, he returned to Hyogo and joined his family's business, Tanaka Tsutomu Kama Seisakusho, originally established as a sickle manufacturer.
In 2000, the business was renamed to Tanaka Kazuyuki Hamono, reflecting its broader focus. Shigeki Tanaka has since developed his brand and is known for crafting both double-edged and single-edged knives. His creations are highly sought after globally, often difficult to acquire due to their popularity and quality.
