Hand-forged in Tosa, Japan by Kyohei Shindo, this 240mm gyuto has an Aogami #2 core clad in soft iron with a kurouchi finish. Aogami #2 takes a keen edge, holds it well, and sharpens easily on stones. Shindo-san's knives are very thin behind the edge with a pronounced distal taper. His knives have become an enthusiast favorite for the performance they deliver at the price. An all-purpose Japanese kitchen knife for cooks who want excellent cutting performance without spending a lot.

Kyohei Shindo was born in Hokkaido in 1988 and spent his university years in Okinawa before relocating to Tosa, Japan to pursue blacksmithing. Largely self-taught, he opened his own workshop in 2020. He has become known among enthusiasts for knives that are exceptionally thin behind the edge, with a pronounced distal taper and cutting performance that consistently outpunches the price.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.

When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away. It could be months before that item comes back, if at all. We bring in new knives regularly, but they're not always the same ones. Our newsletter is the best way to stay updated on new arrivals.
