Hand-forged by Daisuke Nishida in Kumamoto, Japan, this 180mm santoku has a shirogami core at ~62 HRC with soft iron cladding. The kurouchi finish gives it a traditional, rustic aesthetic and makes reactive carbon steel easier to manage. It has a nice heft to it — solid and authoritative in hand. Shirogami takes a keen edge and sharpens easily on stones.

A Japanese multipurpose knife for cooks who want a workhorse carbon steel santoku
Daisuke Nishida is a blacksmith based in Kumamoto, Japan. He began his apprenticeship at 19, trained for nine years, and opened his own workshop in 2006. With nearly three decades in the craft, he works predominantly with Shirogami steel and uses hand forge-welded warikomi construction. Nishida-san forge-welds his own material and builds each knife from there. His knives lean toward a workhorse grind: good heft and enough meat behind the edge that makes the knife feel authoritative and not delicate.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away. It could be months before that item comes back, if at all. We bring in new knives regularly, but they're not always the same ones. Our newsletter is the best way to stay updated on new arrivals.
