Another Ittosai Kotetsu x Zahocho collaboration. Handforged by Yoshikazu Tanaka using aogami#1 core with soft iron cladding. This is the extra tall version of our October custom Tanaka gyuto. Like our October release, this features a relatively thick spine at the handle and heel that gradually thins toward the tip for an authoritative feel while maintaining a laser-like geometry.
Mirror finish with kasumi detail above the hazakai
Cutting edge length at ~230mm
Heel height at ~57mm
Distal taper from 4.0mm (handle) to 1.7mm (midway) to 0.5mm (tip)
Convex on the blade face with subtle concavity on the primary bevel
Handle: Octagonal magnolia with buffalo horn ferrule
Hand Orientation: ambidextrous

The blade is protected with lacquer. Remove with acetone before first use.
