Specifications
Our custom order from 2022 under the Ittosai Kotetsu brand. Handforged by Yoshikazu Tanaka with aogami#1 core and soft iron cladding, then sharpened and finished by a well-regarded sharpener in Sakai.
The blade features a mirror finish with haze above the hazakai for visual contrast, paired with a classic octagonal magnolia handle. Excellent distal taper from 4.0mm at the handle to 0.6mm near the tip.
The sharpener's work is often described as simply 'convex', but closer inspection reveals a nuanced grind: convexity on the blade face transitioning to a very subtle concave primary bevel, then back to convexity near the edge. This delivers effortless cutting while offering great food release despite the thin geometry.
