The 270mm Yoshikazu Ikeda Shirogami #3 Honyaki Gyuto is a handcrafted Japanese chef’s knife, forged by master blacksmith Yoshikazu Ikeda in Sakai, Japan and sharpened by Nori Igarashi of Yamawaki Hamono.
The blade features a stunning Mt. Fuji hamon pattern, showcasing a full moon on the front and a crescent moon on the back. It has been meticulously polished to a mirror finish and comes with a certificate.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away.
