- Handforged in Sakai, Japan by blacksmith Satoshi Nakagawa, sharpened by Morihiro hamono
- 197mm (7.76") cutting edge length with 48.2mm height at heel
- SPG STRIX powdered stainless steel core (~HRC65)
- Mirror-finished blade, polished choil and chamfered spine
- Ideal for professional chefs and enthusiasts seeking a high-performance stainless steel gyuto
SPG STRIX, introduced in late 2023, is a powdered stainless steel developed by Takefu Special Steel Co. Its high-HRC (~65) is achieved by strengthening the steel matrix rather than heavily relying on hard carbides like conventional powder steels. This approach makes it easier to sharpen while achieving carbon-steel-like sharpness.
