The Yu Kurosaki Gekko VG-XEOS Kiritsuke Gyuto 210mm is a handcrafted Japanese kitchen knife forged by renowned blacksmith Yu Kurosaki in Echizen, Japan. Featuring a core of VG-XEOS stainless steel, this gyuto offers excellent edge retention and durability. Its distinctive profile includes a curved spine, setting it apart from traditional gyuto designs. At 210mm, the blade provides an ideal balance of length and maneuverability, making it suitable for a wide range of kitchen tasks.

Unlike typical kiritsuke gyutos that feature a flatter profile, this Kurosaki k-tip gyuto retains the versatility of a traditional gyuto with a gently curved cutting edge. As a multi-purpose knife, it excels at slicing, dicing, and chopping vegetables, as well as handling boneless meats and fish with precision.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.

When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away. It could be months before that item comes back, if at all. We bring in new knives regularly, but they're not always the same ones. Our newsletter is the best way to stay updated on new arrivals.
