Hand-forged by Yoshimi Kato in Echizen, Japan, this 210mm STRIX kiritsuke gyuto has an SPG STRIX core with a tsuchime finish. This is a Japanese chef's knife with a kiritsuke tip, adding a sharper point for detail work alongside general prep. It is fully stainless, so maintenance stays simple. STRIX reaches its hardness by strengthening the steel matrix itself, unlike most powder steels that rely on hard carbides. That makes it easier to sharpen while still holding an edge well. It runs about 65 HRC.

Yoshimi Kato is the third-generation blacksmith at Kato Knife Manufacturing in Takefu, Echizen, a region with 700 years of knife-forging history. He learned the craft directly from his father and grandfather before them, both respected figures in the Echizen blacksmithing community. Yoshimi has been forging knives under his own name since 2012, and took over full leadership of the family workshop in 2018.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.

When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away. It could be months before that item comes back, if at all. We bring in new knives regularly, but they're not always the same ones. Our newsletter is the best way to stay updated on new arrivals.
