Hand-forged in Echizen, Japan by Yoshimi Kato, this santoku features a Shirogami #2 carbon steel core clad in iron damascus with a kurouchi finish. The 170mm edge and 46.2mm heel height make it versatile for everyday kitchen tasks, from slicing to chopping. With a balanced geometry and lightweight feel, it offers smooth cutting performance. Reactive iron cladding will develop a protective patina over time. Suitable for both home cooks and professional chefs.
