The Yoshikazu Tanaka Shirogami #1 Double Bevel Honesuki 170x50mm is a handcrafted Japanese boning knife, custom-made in a double bevel configuration. Unlike traditional single bevel honesuki knives, this version broadens its utility beyond poultry breakdown, allowing it to function similarly to a bunka. Forged by Sakai-based blacksmith Yoshikazu Tanaka and sharpened by Masaya Shimizu of Yamawaki Hamono, this honesuki features a Shirogami #1 steel core known for its ease of sharpening.
Initially requested with a spine thickness of 5mm, the final batch has a thinner 3.5mm spine at the handle. Tanaka-san favored this adjustment to enhance versatility.
About the Honesuki
A honesuki is a specialized Japanese boning knife designed for breaking down poultry with precision. Its stiff blade and reverse tanto tip are ideal for cutting through cartilage, tendons, and joints. It is important to note that honesuki knives are not intended for cutting through bones, as doing so may damage the edge.
