The Miyazaki ATS-34 damascus bunka 200mm is a versatile Japanese kitchen knife designed for everyday prep work. Hand-forged in Nagasaki by Haruki Miyazaki for the Hatsukokoro brand, this bunka features an ATS-34 stainless steel core clad in damascus. The pointed tip allows for detail work like scoring and intricate cuts.
ATS-34 is a premium stainless steel that holds an edge well through regular use, resists rust, and still sharpens to a fine edge when needed. At 186g, it balances light enough for extended prep sessions without feeling insubstantial. The octagonal ebony handle provides secure grip during cutting work.
