Lightly used at home
I've refinished the blade twice. The current finish has minimal contrast but with more details visible on the clad and core--it's somewhat frosty. The first refinish was more contrasty but had fewer visible details.
Straight off natural stones on both refinishes. No fingerstones, sandpaper, powders, acid, etc used
Two videos of the same finish shown under different lighting conditions
Note on wrought iron inclusion: This didn't bother me at all when I received the knife. But for those curious about it, here is Simon's response: "It's a big inclusion inside the wrought iron, that got 'highlighted' during forging, heat treating and grinding. But since it didn't affect the forging process in a negative way and it's not the forgeweld between cladding and core, I think it's an aesthetic thing :) "
Touched up on an Aizu
Lowest grit used on edge was 2k
Lowest grit used on bevels for refinishing was 3k
Handle has been oiled every month
There is a minor artifact on the ferrule that looks like a hairline crack. See last few images
It's an excellent performer. To be honest, this is my ideal gyuto but selling it to try other knives from Simon
