  • Refinished the blade twice—current finish has minimal contrast but reveals more details on the clad and core (somewhat frosty appearance). First refinish had more contrast but fewer visible details
  • Straight off natural stones on both refinishes—no fingerstones, sandpaper, powders, or acid used
  • Two videos showing the same finish under different lighting conditions
  • Note on wrought iron inclusion: This feature didn’t impact performance and is purely aesthetic. Simon Krichbaum explained: "It's a big inclusion inside the wrought iron, highlighted during forging, heat treating, and grinding. Since it didn’t affect the forgeweld between cladding and core, it’s an aesthetic element :)"
  • Touched up on an Aizu; lowest grit used on edge: 2k; lowest grit used on bevels for refinishing: 3k
  • Handle has been oiled monthly
  • Minor artifact on the ferrule resembling a hairline crack—visible in last few images
  • An excellent performer—this is my ideal gyuto, but selling it to try other knives from Simon
