The Kisuke Manaka KOKUENN gyuto 210mm is a handcrafted Japanese chef’s knife forged in Sanjo by blacksmith Kisuke Manaka. Features an Aogami #1 carbon steel core clad with layers of Aogami #2 and soft iron.. The blade is etched to accentuate contrast between steel layers, bringing depth to its visual character.

What is the ENN Series? The ENN Series is Kisuke Manaka's flagship knife collection. It uses an aogami #1 core steel clad with layers of aogami #2 and soft iron. The damascus cladding is handforged in-house using a distinctive approach that differs from typical damascus, which uses layers of soft iron and mild steel—Manaka-san incorporates aogami #2 steel layers. This demanding process reflects in the higher price point. The series has three versions: ENN original with tsuchime kurouchi finish, KOKUENN with etched finish, and Kagero with polished finish and subtle sheen.
Each knife is hand-forged, so no two are exactly alike. The photo shows a randomly selected piece from our stock. If you want to see the exact knife you'll receive, just email us at info@zahocho.com.
Minor variations in surface finish and measurements are normal in hand-forged Japanese knives.
Handle is fitted by the maker and shipped as-is. We don't offer handle swaps.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away. It could be months before that item comes back, if at all. We bring in new knives regularly, but they're not always the same ones. Our newsletter is the best way to stay updated on new arrivals.
