The Hatsukokoro x Nigara Irodori aogami#2 damascus kiritsuke gyuto is a handcrafted Japanese knife forged by Nigara Hamono for the Hatsukokoro brand. Based in Aomori, Japan, Nigara Hamono forged this blade using a core of Hitachi aogami#2 steel, known for its excellent balance of edge retention and toughness.

The blade showcases a striking damascus pattern with bold geometric patterns and angular shapes, etched to accentuate the contrast between the damascus cladding and the Aogami#2 core steel. Its spine is chamfered, exposing the intricate damascus layers. This knife employs a stainless cladding, sandwiching the carbon steel core for easier maintenance. Only the exposed edge will be reactive. The blade is paired with an octagonal walnut handle, accented by a horn ferrule.

A 270mm gyuto is ideal for those who prefer something longer than the usual 240mm chef's knife. This extended length excels at handling larger ingredients and is favored by professionals and home cooks who appreciate extra cutting edge.
