The Hatsukokoro FAXR2 gyuto 240mm is a handcrafted Japanese knife forged by a renowned craftsman based in Toyama, Japan. It features a core of FAXR2 steel, produced by Nachi-Fujikoshi, the makers of SRS-13 and SRS-15 steel. FAXR2 is Nachi-Fujikoshi's designation for the steel SG2. This high-performance steel is renowned for its excellent edge retention and corrosion resistance. The blade has a migaki finish, giving it a smooth, refined appearance.

This gyuto knife is designed for a wide range of cutting tasks in the kitchen. The 240mm blade length makes it well-suited for slicing vegetables, fish, and boneless meats.
