The Hatsukokoro FAXR2 gyuto 240mm is a handcrafted Japanese knife forged by a renowned craftsman based in Toyama, Japan. It features a core of FAXR2 steel, produced by Nachi-Fujikoshi, the makers of SRS-13 and SRS-15 steel. FAXR2 is Nachi-Fujikoshi's designation for the steel SG2. This high-performance steel is renowned for its excellent edge retention and corrosion resistance. The blade has a migaki finish, giving it a smooth, refined appearance.

This gyuto knife is designed for a wide range of cutting tasks in the kitchen. The 240mm blade length makes it well-suited for slicing vegetables, fish, and boneless meats. Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.

When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away. It could be months before that item comes back, if at all. We bring in new knives regularly, but they're not always the same ones. Our newsletter is the best way to stay updated on new arrivals.
