The Yoshihiro nashiji ginsan sujihiki 270mm is a handcrafted Japanese slicing knife made in Sakai. This knife features Hitachi Silver#3 (Ginsanko) stainless steel in sanmai construction with a nashiji (pear skin) finish. Ginsanko is a stainless steel that sharpens easily and takes a keen edge, behaving more like carbon steel during sharpening while offering stainless steel's corrosion resistance. The blade measures 273mm with 37.9mm height and weighs 138g. This sujihiki is designed for slicing boneless proteins and cooked meats. Includes a magnolia saya for storage and protection.
