This knife features Hitachi Silver#3 (Ginsanko) stainless steel in sanmai construction with a nashiji (pear skin) finish. Ginsanko is a stainless steel that sharpens easily and takes a keen edge, behaving more like carbon steel during sharpening while offering stainless steel's corrosion resistance. The blade measures 273mm with 37.9mm height and weighs 138g. This sujihiki is designed for slicing boneless proteins and cooked meats. Includes a magnolia saya for storage and protection.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
