The Yoshihiro nashiji ginsan kiritsuke gyuto 210mm is a handcrafted Japanese chef's knife from Sakai, Japan. This stainless steel gyuto features a Hitachi Silver#3 (Ginsanko) core in warikomi construction with stainless cladding and a nashiji (pear skin) finish. Ginsanko is a stainless steel that sharpens easily and takes a keen edge, behaving more like carbon steel during sharpening while offering corrosion resistance. The blade measures 214mm with 45.8mm height and weighs 155g. This Japanese kiritsuke gyuto handles general kitchen tasks.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.

When will out-of-stock items be restocked? We carry limited, rotating stock. Once something sells out, we don't necessarily reorder it right away.
