The Yoshihiro migaki AS gyuto 240mm is a handcrafted Japanese chef's knife from Sakai, Japan. This carbon steel gyuto features a Hitachi Aogami Super core in sanmai construction with stainless cladding and a migaki (polished) finish. Aogami Super offers excellent edge sharpness and retention. The blade measures 243mm with 48.1mm height. This light and nimble Japanese gyuto has an extremely thin blade that will appeal to laser gyuto enthusiasts. The stainless cladding over the carbon core reduces maintenance requirements.

Why is the blade length different from the displayed size? The size in the product title is a nominal reference used by knife makers. The actual blade can be slightly longer or shorter due to handcrafting and traditional sizing. Each product page lists the exact measured length.
