The Yoshihiro josaku deba 180mm is a handcrafted Japanese knife made in Sakai. This single-bevel knife features monosteel Shirogami #2 carbon steel construction. The blade measures 185mm with 56mm height and weighs 368g. This deba is designed for breaking down whole fish and poultry, with a thick spine and substantial weight for cutting through bones and joints. The carbon steel will develop a natural patina over time with use. Includes a magnolia saya for storage and protection.
